Fajitas are the dish that built Jalapeño's. Marinated 24 hours, seared on a flat-top until the edges char, hit with lime — then slid onto your serving line still sizzling. Skirt steak, chicken, shrimp, or all three, plus blistered peppers and grilled onions piled high.

We bring fajita spreads to events across Midlothian, Waxahachie, Red Oak, Cedar Hill, Ovilla, and Mansfield — corporate lunches, anniversaries, neighborhood block parties, you name it. 10 guest minimum, no upper limit.

24-hour marinated skirt steak
Our signature lime-citrus marinade does its work overnight, then we sear hot and slice against the grain. Comes off the grill medium with a hard char.
Grilled chicken thighs
Boneless thighs, not breast — more flavor, never dry. Same marinade, same flat-top, same char.
Peppers, onions, and lime
Bell peppers and yellow onions blistered on the same surface as the meat so they soak up everything. Lime wedges on the side.
Flour and corn tortillas
Both, kept warm in cloth-lined tortilla warmers. Gluten-free corn tortillas labeled separately.
Fajita bar fixings
Shredded cheese, sour cream, pico, mild and hot salsa, sliced jalapeños. Guacamole add-on at $2/head.
Mexican rice + refried beans

How much fajita meat per person?

We plan 6oz of meat per adult guest — that's a generous serving for a fajita-and-rice plate. For Big Event setups with multiple proteins, we drop to 5oz of each so you can mix.

Can you do shrimp fajitas?

Yes — Gulf shrimp, marinated and grilled to order. Add-on at $4/head, or upgraded into the package on On-Site Grill setups.

Do you grill on-site?

Yes, with the right venue and permits. We bring a portable propane grill, a vent hood for indoors (limited venues), and two cooks. Outdoor venues are easiest.

Can you do this for a sit-down dinner instead of a buffet?

Yes — we plate at a back-of-house station and our server runs trays. Best for groups 25 to 60 and venues with a kitchen prep area.

What about vegetarian guests?

We grill portabella mushrooms, zucchini, and peppers in the same pan (separated). Vegan-friendly. Mention guest count at booking.

Do you cater fajita lunches for offices?

Yes — drop-off or full-service. Most office lunches we run go on the Drop-Off or Fajita Bar package. See office lunch catering for the lunch-specific bundles.
