Yes — our corn shells, corn tortillas, and proteins are gluten-free as cooked (no flour-based marinades). Tell us at booking and we'll label the gluten-free station separately.
Refried beans (no lard available) and grilled vegetables are standard. Vegan: skip the cheese and sour cream — we'll add a labeled vegan salsa cart.
Skirt steak edges out chicken. Carnitas is a sleeper favorite — try it on a kids-and-adults event and adults will fight over it.
Yes — we've done PTA fundraisers, end-of-year staff lunches, and athletic team dinners across Midlothian ISD. We work around bell schedules and dietary accommodations from the campus.
